The production methods split even further: Champagne undergoes its secondary fermentation in the bottle, a traditional process that creates fine, persistent bubbles and those signature toasty, nutty notes. Prosecco uses the Charmat method, where the secondary fermentation occurs in large stainless-steel tanks, preserving fresh fruit flavors and producing a softer, more approachable bubble.
